Processed food with value-addition is the need of this era as it enhances the shelf-life, reduces wastage and meets the expectations of health conscious modern consumer.Biscuits is a product with large market and has a very high acceptability among all age groups. This book describes the development of biscuits using composite flours having high nutritional value. The incorporation of drumstick leaves powder in biscuits flour is being reported first time by the authors. The cost-economics analysis shows that high quality biscuits with low cost can be prepared from composite flours.
