Fruits and vegetables accumulate several hundreds of thousands of so-called ¿secondary metabolites¿ to protect themselves from biotic stress like bacteria, fungi and insects and abiotic stress The by-products of fruits and vegetables i.e. seeds, peels etc. also contain a wide range of secondary metabolites which possesses higher antimicrobial activity. A few studies also represents the efficacy of fruits and vegetable by-products.Present study also reported important phytochemicals in selected fruits and vegetable by-products. The results phytochemical and antioxidant activity lead to the antimicrobial analysis of selected waste material.
